Hazelnut fields are scattered all across the Black Sea coast of Turkey, where farmers harvest these nuts by picking them one-by-one from the branches, or carefully gathering from the ground. Hazelnut harvest starts in August.
After the harvest, hazelnuts are laid under the sun, and pre-dried until their leaves turn brown.
After this pre-drying process, the hazelnuts are separated from their leaves, and laid over canopies in thin layers to be dried under the sun. The total drying period is about 15 - 20 days, depending on weather conditions.
This natural drying process is an important step, and gives Turkish hazelnuts their special taste.
Let’s take a look at some of the facts:
Nearly 70% of the world’s hazelnut demand is met by the Black Sea region in Turkey. The region has the perfect ecological and geographical conditions for the best quality hazelnut growth and harvest.
Stories of hazelnuts date back to almost 5000 years ago, and historical documents record that the hazelnut was growing in Turkey’s Black Sea coastal area as long as 2,500 years ago.
It has been said that some of the hazelnut orchards in the Eastern Black Sea region - including Ordu, Giresun, and Trabzon provinces - were established centuries ago.
The shelf life of a Turkish hazelnut is one year.
In addition to a healthy snack, hazelnuts can be roasted, whitened, minced, sliced, powdered, and pureed for use in chocolates, biscuits, pastries, ice creams, and other sweets.
